For those who love to meal prep their breakfast, and want to enjoy something delicious, warm and filling, you have to try this baked apple and pumpkin oatmeal. Bake it at the beginning of the week so you can reheat a portion every morning. It’s really simple to make and it should keep you full until lunchtime!

Ingredients

  • 4 cups old-fashioned rolled oats
  • 2 tsp. baking powder
  • 1 1/2 tsp. grated nutmeg
  • 1 tsp. ground cinnamon
  • 1/2 tsp. kosher salt
  • 1/8 tsp. ground cloves
  • 4 large eggs
  • 1 15-oz can pure pumpkin puree
  • 1 3/4 cups  milk of choice
  • 1/3 cup maple syrup 
  • 6 tbsp. extra-virgin olive oil, plus more for dish
  • 1 tbsp. plus 1 tsp grated fresh ginger
  • 1 tbsp. pure vanilla extract
  • 3 apples, cut into ½-in. pieces (about 3 cups)

Instructions

  1. Heat the oven to 375°F.
  2. In a bowl, mix the oats, baking powder, nutmeg, cinnamon, salt, and cloves.
  3. In a larger bowl, whisk the eggs and add the pumpkin puree, milk, syrup, oil, ginger, and vanilla. Mix together.
  4. Add the dry ingredients to the larger bowl and mix until just combined. 
  5. Lightly oil a 9-by-13-inch baking dish and scatter 2 cups of the apple on the bottom. Spread the batter on top, then sprinkle with the remaining apples on top.
  6. Bake until fully set and edges begin to brown, 40 to 50 min. Let cool for at least 5 min. before serving. 

Enjoy with some yogurt or cream and start your day feeling full and satiated.
