This spinach and avocado smoothie is packed with so much goodness and it’s the best way to receive your vitamins and minerals in the morning. It’s filled with fiber and healthy fats and will keep you full for a long time. Eating dark leafy greens at least three times a week can provide you with the Vitamin K you need. Vitamin K is important for inflammation and the protection of bones, and it can regulate blood clotting. Here is the recipe.

Ingredients:

  • 2 cups spinach, thick stems discarded
  • 2/3 cups water
  • 1/2 cups kefir
  • 1/2 teaspoons lemon zest plus 1 tsp juice 
  • 1 large avocado 
  • 1/2 inch piece of fresh ginger, sliced
  • 2 tablespoons cilantro
  • 1 scoop collagen (optional)
  • Pinch kosher salt
  • 1/4 English cucumber, frozen
  • 1 cup seedless green grapes, frozen

Instructions:

  1. Blend the spinach, water, kefir, lemon zest and juice, avocado, ginger, cilantro, collagen, and a pinch of salt.
  2. Then add the grapes and cucumber and blend until smooth.
  3. Pour into a chilled glass and enjoy!
