A freshly cooked carrot soup is very healthy and easy to make.
In a pot, add 2 tbsp coconut oil, 1/2 cup chopped onions, 1 garlic clove, 4 tsp minced ginger, 1 lb chopped carrots and 1 chopped sweet potato.
In the end, add 1,5 cups broth and cook it until the vegetables become soft. Puree in a blender.
Preheat your oven at 425Β°F.
Mix 2 tbsp olive oil, 1/4 tsp cumin, salt, and pepper, then toss with 1 lb carrots. Roast for 20 to 35 minutes.
Mix 1/4 cup yogurt with chopped dill, drizzle over the carrots and lastly sprinkle with roasted pepitas.
