Before you throw away the leftover liquid from your can of chickpeas, you should know that there’s so much you can do with it. The protein-rich liquid is making its way into vegan and vegetarian recipes as it’s a great plant-based replacement for egg whites.

There are two ways to get aquafaba. One is by draining canned chickpeas and reserving the liquid and the other is by cooking your own chickpeas and reserving the cooking liquid.

When it’s whipped, it has a texture similar to egg whites and because of its protein structure, it’s strong enough to be used as a substitute for traditional meringues. All you need to do to make aquafaba from a can of chickpeas is to add cream of tartar and whip it by hand or use a mixer like you would whip egg whites. With a mixer, it should take three to six minutes to make.

Aquafaba can be used as an egg white replacement for any recipe or it can be added to baking and cooking recipes like pancakes, waffles, cookies, meringues, or macaroons. With that being said, it won’t work as a substitution for egg whites in an omelet, in recipes that call for whole eggs, or as an egg wash for pastries.

I'm truly mesmerized by the taste & consistency of the vegan meringue on top of this rhubarb tart! It is the first aquafaba twist I ever tried that is actually oven-proof, and I'm already haunted by dreams of pavlova and macarons. Thanks so much to dear friend & wonderfully talented artist @quasi_painting who bestowed me with a trick on how to get an aquafaba consistency that can be used for baked goods also. ?? Recipe coming somewhere soon. Apart from that, this cake made me nearly cry when it came out of the oven. I'm not exactly what I would call a precise-rhubarb-pattern person. Also, I'm not among the talented when it comes to delicate meringue topping – next life, maybe. So, heaven knows why I absolutely wanted to undergo such a food styling challenge for just tomorrow's picnic dessert. In bright kitchen illumination, the cake looked to me like if a messy duvet had crash-landed on a plate of sloppily arranged green & red dominos. Even my sweetheart @arne_schmidt_visuals thought it looked strange, although he always holds my hand and lifts me up in case of food styling desasters. ? Since I had arranged a little photo scene anyhow, I took a picture. And to my surprise, everything fell into place beautifully thanks to a wonderful late afternoon light, turning the duvet into a lovely wave. It can be challenging to balance making healthy food choices with eating the foods you enjoy. We have found the perfect recipe for you that replicates the taste of your favorite sugary cereal, but is a much healthier alternative. This recipe uses chickpeas; who knew chickpeas could be used for more than just hummus?

Ingredients

  • 1 can of chickpeas
  • 1 tablespoon of olive oil
  • 1 tablespoon of honey
  • A dash of cinnamon

Instructions

  1. Preheat the oven to 375 degrees.
  2. Drain and rinse the chickpeas. Use a paper towel to dry them.
  3. Spread chickpeas on a baking sheet topped with parchment paper and bake for around 45 minutes — stop when they’re crispy.
  4. Before they cool down, mix them with olive oil, honey, and cinnamon in a bowl.
  5. Pour onto the baking sheet again and put them in the oven for another 10 minutes to caramelize.
