Soup is one of the ultimate comfort foods, and we can always turn to it when trying to put a healthy twist on our diet. Like all healthy dishes, soup can be turned into a calorie bomb if you’re using the wrong ingredients, but our tips and tricks will help you keep yours on the healthy side.

Avoid Instant Soups

If instant soups happen to be your go-to quick meal, keep in mind they’re pretty unhealthy. Most of them contain a high amount of salt, preservatives, and highly processed ingredients, so they’re best avoided.

High Sodium Content

It’s important not to overdo it with salt when you’re making soup, especially if you’re using canned soup. They often have a pretty high sodium content so it’s best to check a label before buying one.

Skip Heavy Thickeners

Many people turn to thickeners, such as full-fat milk, heavy cream, and butter to make their soups extra rich and creamy, but they’ll significantly up the calorie count and fat content of your soup.

Cut Down on Carbs

If you have a habit of eating soups loaded with pasta, rice, or potatoes, keep in mind they’re only adding extra carbs and calories to your healthy dish.

Ditch Bread & Croutons

Croutons and bread are common add-ins many people eat with their soup, but they’re just adding empty calories that you can do without.

We love to fill up on warm soup all winter long. We like creamy, chunky, and even just plain broth. And if you want a delicious new soup to make, follow this recipe to make the easiest broccoli cheese soup you can make this winter.

Ingredients:

  • 3 tablespoons unsalted butter
  • 2 medium yellow onions, coarsely chopped
  • 6 garlic cloves, smashed and peeled
  • ½ teaspoon red pepper flakes
  • 1 ¼ teaspoon fine sea salt, divided, to taste
  • Freshly ground black pepper, to taste
  • 2 pounds broccoli with stalks
  • 1 large russet potato
  • 6 cups water
  • 4 to 8 ounces of grated sharp cheddar cheese,

Instructions:

  1. Melt the butter in a pot over medium-low heat. Add the onion, garlic, red pepper flakes, ¼ teaspoon salt, and black pepper.
  2. Stir to combine, then cover the pot and cook, stirring occasionally, until the onions have softened and are just starting to turn golden.
  3. Slice and discard the rough bottom ends of the broccoli stalks and peel off the outer skin on the stalk. Cut the stalk into 1-2 inches big pieces.
  4. Cut the florets into small pieces and put them to the side.
  5. Add the chunks of broccoli stalk and potato to the pot and stir. Pour in 6 cups water and the remaining 1 teaspoon salt. Raise the heat to high and bring the mixture to a boil, then reduce the heat to medium-low and cover the pot.
  6. Simmer until the broccoli stalks and potatoes are tender throughout and easily split apart when pierced with a fork, about 20-25 minutes.
  7. Once the potato and stalks are tender, add half of the florets to the pot, stir, cover, and cook until they are bright green, about 3 to 5 minutes. Remove the pot from the heat. Blend the soup, either with a hand blender or a stand blender.
  8. Add the remaining florets. Cover the pot and cook until they are bright green and easily pierced through by a fork, another 4 to 7 minutes. Add the grated cheddar cheese and stir until smooth.
  9. Divide the soup into bowls and top with a sprinkle of cheese and enjoy!

When it comes to meal planning it can seem overwhelming and too much work, but it’s all about having the right ingredients and kitchen gadgets. Here are four must-have kitchen gadgets for meal planning.

Storage Containers

Storage containers are a lifesaver when it comes to meal planning. You are able to distribute the food evenly for each meal and store it correctly in the fridge and freezer, to help it last. Make sure you have at least seven different-sized containers that you will use for your protein, whole grains, fruits, and veggies.

Immersion Blender

For all soup lovers, you need an immersion blender. This gadget can blend your dish in five minutes, it’s great for soups, dressings, and sauces, and doesn’t take up much space in the kitchen.

Spiralizer

A spiralizer is a kitchen gadget game changer for those who want to lower their carb consumption. This little machine will spiralize any vegetable into spaghetti. It will save you time chopping and grating veggies. Just put the vegetable in, turn it a few times and you have zucchini zoodles ready to be cooked.

Crockpot

For those who work full-time and don’t have much time to cook, a crockpot is one of the best kitchen gadgets around. It might take up a little more space but it can cook amazing meals at the switch of a button. Put in your ingredients in the morning, and by dinner, you will have a piping hot meal.
