The warming spices in this gentle curry are wonderful when there’s a chill in the air. The sweet potato can easily be substituted with (or add) your favorite winter squash. Make a big pot, and freeze any excess for later enjoyment. Red lentils make a great addition, but be sure to add more liquid if using and adjust seasoning. You won’t be sorry. #f52community #bestofvegan #cauliflower #sweetpotato #chickpea #soup Spiced Cauliflower, Sweet Potato and Chickpea Stew with Greens Serves 8 or 4 really hangry people 1/4 cup olive oil or ghee 1/2 onion 1 clove garlic, minced (optional) 2 Tbs fresh grated Ginger (if ground a scant tsp) Many turns of black pepper (I like to taste it) 1 15 oz can chick peas, drained 1 can coconut milk 2+ cups veg stock or stock of choice (if using water, increase seasoning as you see fit) 1 1/2 tsp turmeric 1/2-1 tsp cumin 1/2 tsp coriander 1/4-1/2 tsp chili flakes (if you have Aleppo or Calabrian, use those) Sea salt throughout 1 sweet potato, peeled and diced into 1/2” cubes, divided I medium head cauliflower, broken into florets and stems chopped, divided. 1 apple, chopped (or 1/4 cup apple cider) Any leftover roasted veggies you may have kicking around Bunch of greens (kale, spinach…), washed and coarsely chopped or torn (thick stems removed) For garnish: Roasted chick peas Parsley Cilantro Mint Nigella seeds Chili flakes Greek yogurt Optional: 1/2-1 cup split red lentils (add 1-2+ cups liquid) Preheat large heavy bottomed pot over medium heat. Sauté onion with a pinch of salt over low heat to avoid burning and promote the caramelization, about 8 minutes. Add a generous amount of fresh ground black pepper and stir until fragrant. Raise heat back to medium and add turmeric, cumin, chili flakes, garlic and ginger and stir. If pan seems dry, add another splash of olive oil and continue stirring for about a minute or two.
