They say that breakfast is the most important meal of the day, but not all of us have time for it. We tend to grab whatever we can and head straight out the front door, instead of making time for a hearty meal. Baked egg cups are a great solution to this issue as they’re easy to transport and they’re packed with protein and nutrients. Here’s how to make them.

Ingredients:

  • 6 large eggs
  • 1 cup egg whites
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon ground pepper
  • 1 teaspoon coconut oil
  • 1/2 orange bell pepper, chopped
  • 1/2 cup yellow onion, chopped
  • 1 cup broccoli, chopped into small pieces
  • 1 cup mushrooms, sliced
  • 1/3 cup feta
  • 2 tablespoons fresh parsley

Instructions:

  1. Preheat the oven to 375 F and spray a twelve-cup muffin tin with cooking spray or line them with silicone baking cups.
  2. Put the eggs and egg whites into a large bowl and whisk them. Season them with salt and pepper.
  3. Heat a skillet over medium heat with 1 teaspoon oil. Add the chopped veggies and cook for 5-6 minutes, until they’re soft and the onions are fragrant.
  4. Add the sauteed veggies into the bowl with the eggs and add feta and parsley. Mix well.
  5. Pour the egg mixture into muffin cups.
  6. Bake for 17-20 minutes or until the eggs are no longer runny and you can insert a toothpick into them and it comes out clean.
  7. Allow the eggs to cool and enjoy!

Protein is one of those words that everyone thinks is the answer to all your dietary needs. If you’re trying to lose weight or build muscle you are often told to incorporate more protein in your diet. Protein is an essential part of your nutrition as it builds and repairs muscles after workouts and produces hormones.

The main question for everyone is how much protein should you be eating each day? This number requires some math as the recommended daily value for protein intake is about 0.36 grams per body weight pound. These numbers also depend on your health and fitness. For those who are wanting to lose weight and are exercising, you can increase that amount up to 0.7 grams per body weight pound. For muscle gain, it’s 0.8 grams per body weight pound.

The best sources of protein come from lean meats, fish, eggs, beans, nuts, and grains. If you aren’t eating enough protein during the day then start adding in some protein supplements, like shakes and bars.

Chickpea pancake (socca) with curried crispy chickpeas, fried egg, sauteéd garlicky pea shoots, dressed with lots of lemon and olive oil. Satisfying enough for lunch or dinner, or even as a savory breakfast dish. __________________ Chickpeas: drain and rinse a 15 oz. can of chickpeas. Pat dry and toss with salt and 1 tsp of curry powder. In a carbon steel pan, heat up some olive oil on med-low, add the chickpeas, and cook for about 10+ min, tossing occasionally, adding more oil if needed. Cook the chickpeas low and slow so they dry and crisp up a bit without burning. Meanwhile, sauté some pea shoots (or your favorite greens) with a minced garlic and make the chickpea pancakes. __________________ Chickpea pancake, slightly adapted from @moroccochris’s recipe (makes 2): Whisk ½ cup chickpea flour with ½ tsp. turmeric + curry powder each, ½ cup water, and 1 Tbsp olive oil. Let sit for at least 15 minutes. Heat olive oil over med-high in a nonstick or cast iron pan, add half of the pancake batter and tilt skillet so it spreads out into a relatively thin pancake. Cook until golden underneath, about 2-3 minutes. Carefully flip and cook the other side for about a minute more. Transfer to a serving plate and repeat with the remaining batter. __________________ When chickpeas are golden and somewhat crisped, top onto the chickpea pancakes, add on the sautéed pea shoots, pea shoot fronds, scallion, fried egg, drizzle on with lots of lemon juice and olive oil. Chickpea pancake (socca) with curried crispy chickpeas, fried egg, sauteéd garlicky pea shoots, dressed with lots of lemon and olive oil. Satisfying enough for lunch or dinner, or even as a savory breakfast dish. __________________ Chickpeas: drain and rinse a 15 oz. can of chickpeas. Pat dry and toss with salt and 1 tsp of curry powder. In a carbon steel pan, heat up some olive oil on med-low, add the chickpeas, and cook for about 10+ min, tossing occasionally, adding more oil if needed. Cook the chickpeas low and slow so they dry and crisp up a bit without burning. Meanwhile, sauté some pea shoots (or your favorite greens) with a minced garlic and make the chickpea pancakes. __________________ Chickpea pancake, slightly adapted from @moroccochris’s recipe (makes 2): Whisk ½ cup chickpea flour with ½ tsp. turmeric + curry powder each, ½ cup water, and 1 Tbsp olive oil. Let sit for at least 15 minutes. Heat olive oil over med-high in a nonstick or cast iron pan, add half of the pancake batter and tilt skillet so it spreads out into a relatively thin pancake. Cook until golden underneath, about 2-3 minutes. Carefully flip and cook the other side for about a minute more. Transfer to a serving plate and repeat with the remaining batter. __________________ When chickpeas are golden and somewhat crisped, top onto the chickpea pancakes, add on the sautéed pea shoots, pea shoot fronds, scallion, fried egg, drizzle on with lots of lemon juice and olive oil. Season with salt + pepper and chili pepper flakes. #f52eggs
