Cool Down With These Roasted Berry and Honey Yogurt Popsicles

Popsicles are a summer staple, but many of the ones you get from the supermarket are filled with added sugars and ingredients which are hard to pronounce. By roasting the berries, you’ll bring out the sweetness and remove some of the water which makes the popsicles super creamy. These pops use Greek yogurt, roasted raspberries and blueberries, and are naturally sweetened with honey. They’re a great healthy, refreshing treat!

Ingredients:

  • 12 ounces small berries, like blueberries and raspberries
  • 2 teaspoons sugar, optional
  • Dash of sea salt
  • 2 tablespoons + ¼ cup honey (to taste)
  • 2 cups whole Greek yogurt
  • ½ small lemon, juiced

Instructions:

  1. Preheat the oven to 350 F and line a rimmed baking sheet with parchment paper.
  2. Toss berries with the sugar, sea salt, and 2 tablespoons of honey in a medium bowl.
  3. Pour the berries on the baking sheet and arrange them in a single layer. Roast them for 30 minutes, stirring halfway, long enough for the berry juices to thicken but not burn.
  4. Blend together Greek yogurt and lemon juice in a medium bowl. Mix in honey to taste, until it’s just sweet enough for you (the berries will make it sweeter).
  5. Let the berries cool for 10 minutes and scape them and their juices into the yogurt bowl. Mix them together with the yogurt.
  6. Transfer the blend into popsicle molds and insert a popsicle stick.
  7. Freeze for at least four hours and when you’re ready to eat them, run the outside of the molds under warm water for a few seconds to remove the popsicles.
