Winter is not a time for salads. In the colder months, our bodies crave warmer, more nutrient-dense foods. But that doesn’t mean we need to compromise on getting enough portions of fruits and veggies in the winter. There are plenty of ways to up our veggie intake, while enjoying comforting, filling and nourishing meals.

Soup

Easily digestible, economical, and packed with goodness, soup is a perfect winter staple. Soups are also a great way of using up odds and ends in the vegetable drawer. Why not try adding chickpeas or lentils to your vegetable soup for some extra protein, or topping your soup with nutrient-dense toasted seeds?

Stir-Fry

Packed with punchy flavors, stir-fried veggies are way more exciting than a salad but still have that fresh crunch you might be craving. Serve your stir-fried veggies with tofu or grilled chicken on a bed of brown rice for a perfectly balanced meal.

Curry

Winter is a time to spice things up! Experiment with different veggie curries to get your taste buds tingling. Curry is also a fantastic dish to batch cook on a Sunday so you have hearty, nourishing dinners all ready for the week ahead.
