Fight the Heat with Mango-Lassi Chia Pudding

It can be difficult to come up with new things to eat while fighting the summer heat. Spending more than five minutes by the hot stove sounds like a nightmare, and you don’t want to eat anything that’s too hot anyway. Fortunately, the recipe for mango-lassi chia pudding doesn’t require you to do any of that.

Amy Talei behind the food blog Harvest Cooked shared this delicious recipe on Instagram because she’s tired of the current heatwave as much as the rest of us. She described this recipe as truly refreshing and revitalizing, and we can’t help but agree.

Mango-lassi chia pudding is her answer to the 95-degree weather because she “can barely stand being in the kitchen” these days. We feel her pain and embrace this delicious recipe with open arms!

Ingredients:

  • 3/4 cup plant milk
  • 1/4 cup coconut yogurt
  • 1 tsp vanilla
  • 3 tbs chia seeds
  • 1/2 cup fresh or frozen mango

Instructions:

  1. Add everything except for the chia to a blender and mix until smooth.
  2. Stir the chia and let it sit overnight.
