Treat Yourself to Chocolate Covered Frozen Bananas

Sometimes you need something sweet at the end of the day and if you’re looking for something that’s not high in calories and still has nutritional value, chocolate covered bananas are a great way to treat yourself without having tons of sugar and fat. They’re super easy to make and you can add whatever fixings you like to them. They only take 15 minutes to make and 1 hour in the freezer.

Ingredients:

  • 4 large banana, peeled and cut in half crosswise
  • 8 wooden or plastic popsicle sticks
  • 4-ounces 70% dark chocolate, chopped
  • 1 tablespoon coconut oil

Optional Toppings:

  • roasted peanuts, freeze-dried strawberries, peanut butter, M&M’s, toasted coconut flakes, sprinkles, Oreos

Instructions:

  1. Line a baking sheet or tray with parchment paper.
  2. Gently push a popsicle stick into the bottom (cut side) of each banana. Place it on the tray and freeze until it’s solid, about 1 hour.
  3. Combine the chocolate and oil in a microwave-safe measuring cup and microwave on high for 1 minute. Stir and microwave in 30-second bursts, stirring between bursts, until the chocolate is melted.
  4. Put the toppings on separate plates and dip the banana in the chocolate mixture, making sure that the banana is covered.
  5. Quickly add the toppings on top of the chocolate covered bananas and lay the bananas on the baking sheet.
  6. Serve immediately or store in an airtight container in the freezer for up to 3 months.
