Oatmeal is pretty much the perfect breakfast, but if you’re eating it in the same way day after day it may be time to change something. Now that fall’s here, let’s experiment with some seasonal flavors. There’s no better oatmeal variety to try this fall than this pumpkin spice recipe. Here’s how to make it.
Ingredients:
1/2 cup coconut milk
1/2 cup pumpkin puree
1/4 cup rolled oats
1 tablespoon maple syrup
1/4 teaspoon pumpkin spice
1/4 teaspoon cinnamon
Instructions
Take a small bowl and mix pumpkin puree, maple syrup, and pumpkin spice together. Mix rolled oats, coconut milk, and cinnamon in a separate bowl.
Place half of the pumpkin mixture at the bottom of a Mason jar or a similar dish. Add oats, then top with the rest of the puree.
Leave in the fridge overnight. In the morning, top with fresh granola and enjoy!
