Scallop Soup is a Protein-Packed Light Meal

Scallops are one of the most protein-packed seafood out there. With more than 80% protein, you’ll want to be chowing down on this delicious recipe at least once a week. Scallop soup is a light meal which you can have either light and soupy or thick and hearty. Another great fact about them is that they’re loaded with magnesium and potassium so your bones can grow strong and your immune system stays healthy.

Ingredients

  • ginger
    500ml of vegetable powder
  • fresh coriander
  • green lime
  • Thai basil leaves (or the normal kind if you can’t find this in your local Asian grocery store)
  • ginger
  • rice vinegar
  • chili (if you want it spicy)
  • lemongrass stalk
  • scallops
  • beansprouts
  • green beans
  • fish sauce

Instructions:

  1. Put the veggie stock, coriander stalks, lime leaf, ginger, chili, and lemongrass in a pot.
  2. Boil it for a few minutes.
  3. Chop up all the veggies while letting the sauce and flavors marinate.
  4. Add the chopped mushrooms, scallops, and beans.
  5. Cook it for a few more minutes.
  6. Add the liquids: rice vinegar, lime zest and fish sauce (you may omit the fish sauce or add soy sauce if you please).
  7. Top it off with chili, Thai basil leaves, and a lime wedge.
