These Vegetable Pasta Alternatives Won’t Leave You Hungry

We love pasta, after all, it’s one of the most popular comfort foods around the world. But, if you’re on a low-carb diet, gluten-free, or looking for a healthier alternative, vegetables are a great substitute. They’re full of antioxidants, vitamins, and fiber and they’re actually really tasty! Add some variety to your next meal with these vegetable alternatives.

Zucchini and Cucumbers

We’re sure you’ve tried or at least heard of zoodles. But, did you know you can also make vegetable noodles with cucumbers? All you have to do is spiralize them and treat it like it’s angel hair pasta. Cook the zucchini or cucumbers for one to two minutes, until they are barely tender, and drain them. Top them off with sesame, chilies, butter, lemon, or herbs.

Squash and Sweet Potatoes

There must be a reason it’s called spaghetti squash—after it’s cooked, the stands look just like pasta. The flavor is neutral so you can use any kind of sauce with it. Sweet potatoes and butternut squash also work as alternatives and all you need to do is chop them up and throw them in a food processor. Add some cheesy sauce or sauteed garlic and spinach and your dish is ready to eat!

Beets

If you’re craving ravioli, roast or steam some beats and thinly slice it was a mandoline. Pair it with goat cheese or mozzarella, with a drizzle of olive oil.
