Vanilla, White Chocolate, and Raspberry Chia Jam Tart by @panaceas_pantry Headover to her page for loads of deliciously healthy recipes! #recipe 👇 ➕➕INGREDIENTS CRUST. 250g (2 cups) plain flour 105g (1/3 cup + 2 Tbsp) cold vegan butter, cubed 3 Tbsp sugar 45ml ice cold water. 30g dark chocolate. . ⏩⏩Instructions 1. Preheat oven to 180C. Set a 25cm tart tin aside (grease, if needed). 2. Add all ingredients (except chocolate) to a food processor and pulse to forms dough. Turn pastry onto a lightly floured bench, then roll into a large, neat circle (around 32-35cm diameter). Carefully place the pastry into tin, gently pressing into the base and sides. Bake for 15 mins. Melt chocolate then brush over the base. Set aside. . RASPBERRY JAM. 1 1/2 cup raspberries 1 Tbsp chia seeds 2 Tbsp lemon juice Splash water. . ⏩⏩Instructions 1. Add raspberries, water and lemon juice to a heavy based sauce and cook over low heat for 2-3 mins. Add chia, and cook a further 5 mins, stirring regularly. Once thickened allow to cool then spread over tart base. Place in the fridge while you make the topping. . VANILLA WHITE CHOC LAYER. 1 cup cashews, soaked 4 hours in water. 3/4 cup coconut cream 1/4 cup maple syrup 2 tsp pure vanilla extract 40g vegan white chocolate 2 Tbsp coconut oil. . ⏩⏩Instructions 1. Melt chocolate and coconut oil in a heat proof bowl double boiler style. Once liquid, remove from heat and set aside. 2. Drain cashews and add to Vitamix with all remaining ingredients. Start on speed 1, then slowly increase all the way to 10 and blend for 1 minute, or until silky smooth. Pour over chia jam, then set in the fridge overnight.
