Try These High Protein Pancakes for Breakfast

It has often been said: breakfast is the most important meal of the day. It needs to provide you with slow-burning energy to set you up for the tasks ahead. But not all healthy and energizing breakfasts have to be boring and tasteless. Try out these protein pancakes and see the change in your energy levels.

Ingredients:

  • 2 eggs
  • 40 grams rolled oats
  • 75 grams low-fat cottage cheese
  • Ground vanilla
  • 1/4 teaspoon of cinnamon
  • Optional toppings: strawberries, blueberries, or banana

Instructions:

  1. Put all of the ingredients into a blender and blend until smooth.
  2. Heat some coconut oil in a pan. This is lighter than olive oil and doesn’t burn so easily. Cook the pancake batter one batch at a time until they turn golden brown.
  3. Once they’re ready, you can finish them by adding your favorite toppings. They go nicely with some fresh strawberries, blueberries, or banana for extra nutrients and a drizzle of maple syrup.
