Ingredients:

  • 2 eggs
  • 40 grams rolled oats
  • 75 grams low-fat cottage cheese
  • Ground vanilla

  1. Put all of the ingredients into a blender and blend until smooth.

The best thing about chia pudding is that you can make it the night before. All you need is a cup of non-dairy milk, 1/3 cup of chia seeds, and a sweetener of your choice. Chickpea pancake (socca) with curried crispy chickpeas, fried egg, sauteéd garlicky pea shoots, dressed with lots of lemon and olive oil. Satisfying enough for lunch or dinner, or even as a savory breakfast dish. __________________ Chickpeas: drain and rinse a 15 oz. can of chickpeas. Pat dry and toss with salt and 1 tsp of curry powder. In a carbon steel pan, heat up some olive oil on med-low, add the chickpeas, and cook for about 10+ min, tossing occasionally, adding more oil if needed. Cook the chickpeas low and slow so they dry and crisp up a bit without burning. Meanwhile, sauté some pea shoots (or your favorite greens) with a minced garlic and make the chickpea pancakes. __________________ Chickpea pancake, slightly adapted from @moroccochris’s recipe (makes 2): Whisk ½ cup chickpea flour with ½ tsp. turmeric + curry powder each, ½ cup water, and 1 Tbsp olive oil. Let sit for at least 15 minutes. Heat olive oil over med-high in a nonstick or cast iron pan, add half of the pancake batter and tilt skillet so it spreads out into a relatively thin pancake. Cook until golden underneath, about 2-3 minutes. Carefully flip and cook the other side for about a minute more. Transfer to a serving plate and repeat with the remaining batter. __________________ When chickpeas are golden and somewhat crisped, top onto the chickpea pancakes, add on the sautéed pea shoots, pea shoot fronds, scallion, fried egg, drizzle on with lots of lemon juice and olive oil. Season with salt + pepper and chili pepper flakes. #f52eggs

Cooking can be very fun, but let us be honest, who loves to stay in front of the stove in the summer when the temperatures are high? That’s why we bring you three breakfast ideas that are quickly and easily done, and most importantly, they don’t need cooking and are great if you are watching your diet.

Cold Oatmeal

This dish requires preparation in advance, like the night before. Instead of using hot water, prepare your oatmeal by pouring it over yogurt. If you want, you can add a handful of walnuts, almonds, or hazelnuts and leave it in the fridge overnight. In the morning, add some of your favorite fresh fruits.

Toast With Soured Milk and Fruit

Take two slices of toast, and put a fine amount of sour milk over it. Finally, add raspberries on top – or some other fruit rich in antioxidants.

Garden-Bun

Take a fresh bun and put cream cheese onto it. Add finely chopped mango and a handful of fresh green salad. Put some thickly sliced tomatoes and cucumbers, then pour a few drops of olive oil, and voila, your breakfast is ready!

Ingredients:

  • 2 eggs
  • 40 grams rolled oats
  • 75 grams low-fat cottage cheese
  • Ground vanilla
  • 1/4 teaspoon of cinnamon

Instructions:

  1. Put all of the ingredients into a blender and blend until smooth.

Chickpea pancake (socca) with curried crispy chickpeas, fried egg, sauteéd garlicky pea shoots, dressed with lots of lemon and olive oil. Satisfying enough for lunch or dinner, or even as a savory breakfast dish. __________________ Chickpeas: drain and rinse a 15 oz. can of chickpeas. Pat dry and toss with salt and 1 tsp of curry powder. In a carbon steel pan, heat up some olive oil on med-low, add the chickpeas, and cook for about 10+ min, tossing occasionally, adding more oil if needed. Cook the chickpeas low and slow so they dry and crisp up a bit without burning. Meanwhile, sauté some pea shoots (or your favorite greens) with a minced garlic and make the chickpea pancakes. __________________ Chickpea pancake, slightly adapted from @moroccochris’s recipe (makes 2): Whisk ½ cup chickpea flour with ½ tsp. turmeric + curry powder each, ½ cup water, and 1 Tbsp olive oil. Let sit for at least 15 minutes. Heat olive oil over med-high in a nonstick or cast iron pan, add half of the pancake batter and tilt skillet so it spreads out into a relatively thin pancake. Cook until golden underneath, about 2-3 minutes. Carefully flip and cook the other side for about a minute more. Transfer to a serving plate and repeat with the remaining batter. __________________ When chickpeas are golden and somewhat crisped, top onto the chickpea pancakes, add on the sautéed pea shoots, pea shoot fronds, scallion, fried egg, drizzle on with lots of lemon juice and olive oil. Season with salt + pepper and chili pepper flakes. #f52eggs

Cold Oatmeal

This dish requires preparation in advance, like the night before. Instead of using hot water, prepare your oatmeal by pouring it over yogurt. If you want, you can add a handful of walnuts, almonds, or hazelnuts and leave it in the fridge overnight. In the morning, add some of your favorite fresh fruits.

Toast With Soured Milk and Fruit

Take two slices of toast, and put a fine amount of sour milk over it. Finally, add raspberries on top – or some other fruit rich in antioxidants.

Garden-Bun

Take a fresh bun and put cream cheese onto it. Add finely chopped mango and a handful of fresh green salad. Put some thickly sliced tomatoes and cucumbers, then pour a few drops of olive oil, and voila, your breakfast is ready!
