Any type of bread is delicious, but if you’re trying to eat well you definitely need to stay away from it. This sugar-free banana bread recipe is made of ingredients that won’t break your diet. It will take you 45 minutes to make it and you can combine it with all your favorite healthy toppings. Don’t hesitate to add fruits such as blueberries to the mix as well.
- 1 egg
- 1/4 cup unsweetened almond milk
- 2 cups spelt or whole wheat flour
- 1/2 teaspoon cinnamon
- 3 mashed overripe bananas
- 1/2 teaspoon salt
- 2 teaspoons vanilla extract
- 1/2 teaspoon baking powder
- 1/4 cup olive oil or melted coconut oil
- 1 teaspoon baking soda
Set the oven to 350 F degrees and prepare a baking pan with cooking oil.
Mash the bananas and transfer them to a bowl. Combine them with the egg, milk, vanilla and oil.
In another bowl mix the baking powder, baking soda, salt, cinnamon, and flour.
Now, combine the ingredients from the two bowls. Make sure that you mix everything very well.
Place the sugar-free banana bread on the baking pan. Leave the pan in the oven for 45 minutes.
When you take it out the bread will still be only a little moist on the inside.
Wait for 5 to 10 minutes before you serve it.
