These Pumpkin Muffins Are the Healthiest Treat For Fall

Fast and healthy snack recipes are always great, especially if you’re a busy person who doesn’t have too much time to cook. These pumpkin muffins take a little over 30 minutes to be done. The ingredients are all easy to find and you will get 12 muffins that you can have right away or keep for the following day.


  • 1 teaspoon cinnamon
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup melted coconut oil
  • 1 cup pumpkin puree
  • 1/2 cup real maple syrup
  • 1 3/4 cups whole wheat pastry flour
  • 1/2 teaspoon salt
  • 1/4 cup milk
  • 1 teaspoon baking soda
  • 1/3 cup old-fashioned oats


Set the oven to 325 F degrees and prepare a baking tin for 12 muffins.

Combine the pumpkin puree, coconut oil, vanilla, egg, pure maple syrup, milk together. Mix them all well and set the bowl aside.

In a second bowl add the oats, baking soda, flour, salt, and cinnamon. Mix everything well together.

Now, combine the ingredients from the two bowls and stir. You shouldn’t mix too much.

The following step is to fill the 12 muffin spots in the tin and top them off with extra oats. Place the tin in the oven for 22 to 25 minutes.

You can always check whether the pumpkin muffins are done with a toothpick. Leave the tin on the side for 5 minutes and you can serve them.
